2 lbs 80 Crystal
.5 lb Victory Malt
.2 lb Chocolate malt
.2 Black Malt
.5 Wheat Malt

Hop Schedule:
60 min - .77 oz Fuggles @ 5.4 AA
30 min - .19 oz Fuggles @ 5.4 AA
.25 oz Kent Golding @ 5.0
5 min - .25 oz Kent Golding @ 5.0

Mash:
3.71 Gallons
Target Mash Temp - 164 (154 + 10)
Init Mash Temp 144
Adjust with boiling water raised to 154 @ 15 min

Sparged with 10 gallons of 170 deg. water

Waited overnight for boil.

cooled to 77 deg before putting in fermenters
pitched @ 9:30 on 1/4/03

Ferment was rather gentle.

After 1 week transferred to secondary.

After 2 weeks in secondary, measured 1.010 density.
Kegged with 1/2 cup corn sugar.
