Holiday beer modified from The Brewmasters Bible

Grain Bill:

  • 9lb 2oz lbs Domestic 2r ow
  • .5 lb crystal malt
  • 2 oz black patent malt
  • 1 lb honey
Hops:
  • 2 oz Cascade AA 7.5  @ 60min
  • 0.5 oz Sazz @ 5 min
Other:
  • 1 oz grated ginger root
  • 2 3 inch cinnamon sticks 
  • Grated peel of 4 oranges - Zested
Yeast: White Labs - California Ale V

Brewed: 11/22/09

Brew Notes:

  • Mash water: 4 gal.
  • Strike temp Target: 164  Actual 165
  • Mash temp 154
  • 60 minutes in Mash
  • Added Honey@ 20 minutes
  • Finished boil with only 4 gallons, may have boiled too high. Density measured at 1.080, added a gallon + of water

OG: 1.060

Fermentation Notes:

  • Started out in Garage, temp was about 60 deg F next morning with slow fermentation.
  • Moved inside at day 3, overnight temp moved to 70 deg - more inline with temp requirements of yeast.

FG:1.020

Turned out to be a really excellent beer.  It certainly had orange overtones with a gingery/spicy finish.  Not much cinnamon taste, not sure if I would add it next time.
