Alton Browns Cinamon Rolls
Bread
4 Egg Yolks
1 whole egg
2 oz sugar
3 oz melted butter
6 oz of buttermilk

20 oz all purpose flour
1 package Instant dry yeast

Filling:
1 Tbs Cinnamon
8oz light brown sugar

Frosting:
2 1/2 oz cream cheese
3 Tbs whole milk
5 1/2 oz powdered sugar
Mix eggs, sugar, butter and buttermilk until mixed.

Add 2 cups flour, yeast, 1 1/4 tsp salt and mix until well mixed.

Kneed in all but 3/4 cup of the flour. If dough is too sticky add some more flour (a third of what is left). Kneed for 5 minutes until the dough is soft and springy.

Kneed by hand for 30 seconds. Let rise in covered bowl until doubled in size.

Stir Cinnamon, brown sugar and a pinch of salt together in a bowl.

Punch down and roll dough into a 18x12 inch square. Brush on 3/4 oz of melted butter leaving a 1 inch band on the long side of the rectangle. Spread on filling (except on the top 1 inch border) and press it down into the dough.

Roll dough toward the unbuttered side and pinch the edge over. Cut in half, then those into thirds, and then those into half to get 12 evenly sized rolls.

Add rolls to a buttered 9x13 pan and space them evenly. Wrap with saran wrap and refrigerate for 16 hours (or overnight).

Proof dough by putting a baking dish in the bottom of your ove and fill it a third with boiling water. Put rolls on rack above pan and close door for 30 minutes. After 30 minutes the rolls should have risen to fill pan.

Remove pan of water and rolls. Preheat to 350 degrees. Bake rolls for 30 minutes or internal temp reaches 190 deg.

Frosting:
Beat cream cheese until it is creamy blend in 3 table spoons whole milk. Add 5 1/2 oz powdered sugar (sifted)

Spoon frosting over rolls.

Variation:

Ring of love.

Roll out dough Item from above to 12 x 24 rectangle. Brush with 1 Tbs melted butter (leaving one long border dry) and add a mixture of:

8oz sugar
zest of 2 lemons
2 Tbs minced ginger
2 Tbs candied ginger (minced)
5 oz flour

pressing down. Roll and pinch as above but instead of cutting, form a ring and mash ends together. snip cuts into top of ring. Proof as above and cook in a 350 deg oven for a half an hour.

Glaze:
4 oz of jam
1 oz Candied ginger (minced)
1 oz water

Cook over medium heat. Glaze ring when it is cool.
