Surprise Peach Pie

1 pie crust (for bottom and lattice top)
3 lb. ripe peaches
1 c pitted prunes
2/3 c brown sugar
3 T cornstarch
1/2 t salt
1 T sugar
Prepare pie crust. Line pie plate with dough.

Peel and slice peaches. Cut each prune into quarters. In large bowl, mix peaches with prunes, brown sugar, cornstarch and salt. Spoon filling into crust.

Roll remaining dough and cut into 1" strips. Place half of strips over filling, do not seal ends. Fold every other strip halfway from center. Place center strip on pie and replace folded part of strips. Fold back alternate strips, place second cross strip in place. Repeat to weave lattice. Turn overhang up over ends of strips, pinch to seal, make high fluted edge. Sprinkle lattice and edge with sugar.

Place foil with edges turned up or baking tray on oven rack below pie to catch drips. Bake 425F for 1 hour or until mixture bubbles and crust is golden.
