Candied Walnuts
1/3 c sugar
2-1/2 T brown sugar
1/2 t salt
1/2 t cinnamon
pinch cayenne
1 lg. egg white, at room temperature
1/2 lb. walnut halves
Heat oven to 300F.

mix both sugars, salt, cinnamon, and cayenne. In large bowl, whisk egg white until frothy. Whisk in 1 T water until combined. Add walnuts and stir to coat. Sprinkle on the sugar mixture and stir evenly to distribute.

Line rimmed baking sheet with parchment. Spread sugared nuts into a single layer. Bake 15 minutes, stir the nuts, and continue baking until the nuts smell toasted and the sugar coating is carmalized, about another 15 minutes.

Let the nuts cool on the pan, separating as they cool. When completely cool, transfer to airtight container. They will store for 2 weeks.
