Peach cobbler
1 can peaches with syrup
2 t grated lemon peel
3 T lemon juice
2 T tapioca
1.5 c flour
2 t baking powder
1/4 t salt
4 T sugar, divided
1/3 c butter
1 beaten egg
1/2 c milk
1/2 c water
2 T butter
Sprinkle fruit with lemon juice and tapioca. Sift together flour, baking powder, salt and 2T sugar. Cut in butter. Combine egg and milk. Spoon over top. Combine 2T sugar, water, butter and bring to boil. Pour over batter. Bake 375 for 45 minutes.
