Enchilada Bake
Mexican
1 lb ground beef (or turkey)
1 diced onion
1 can sliced black olives, drained
1 can diced chiles, drained
1/2 bag frozen white corn
1 bag grated three cheese blend
1 bottle Trader Joes enchilada sauce
pkg. corn tortillas (10-12)
Brown beef with onion. Season with salt, pepper and garlic. Add black olives, chiles and corn.

Spray 9x13 (or 8x8 for a thicker casserole) pan. Coat with 1/3 bottle enchilada sauce. Scatter 6 cubed corn tortillas. Top with beef mixture, 1/2 bag of cheese and 1/2 bottle enchilada sauce. Scatter remaining tortillas. Drizzle remaining enchilada sauce and sprinkle remaining cheese.

Cover and bake 350 for 30 minutes. (Or leave uncovered, and the tortillas on top will be crispier!)
