Buttermilk Pancakes
Breakfast
4 1/2 oz (1 C) flour
1/2 t baking soda
1/4 t table salt
1 large egg
1 T canola or safflower oil
1 C buttermilk
Mix dry ingredients. Add wet ingredients. Whisk until no dry flour is visible. There will be lumps. Do not over mix.

Cook on griddle or in frying pan with a little oil.
 
Fine cooking
Serves 2 to 3. Recipe can be doubled or tripled.
