Fiesta Stew Pot
Soups
3 T flour
1/2 t cumin
1/2 t chili powder
1/2 t garlic powder
1/4 t cinnamon
1.5 lb lean beef chuck, cut into 1" pieces
2 T oil
1 c beef broth
1 c apple juice
6 small potatoes, peeled and quartered
2 med sweet potatoes, peeled and cubed
1 yellow & 1 red pepper, cut into 2" strips
1 onion, sliced
2 granny smith apples, cut into 1: cubes
1 10-oz can diced tomatoes with green chiles
1 8-oz can tomato paste
2 T honey
1 15.5-oz dark red kidney beans

Combine flour, cumin, chili powder, garlic powder and cinnamon. Add beef cubes and coat with mixture. Heat the oil in a heavy pot. Brown the beef. Add the beef broth and apple juice. Cover and simmer for 1 hour.

Add the potatoes, peppers, onion, tomatoes, tomato paste and honey. Cover and simmer 30-35 minutes.

Add the apples and kidney beans. Simmer 20 minutes.

Serve with a dallop of sour cream.
