Vegetable couscous
Side Dishes
3 green onions, thinly sliced
2 med carrots, thinly sliced
1 T olive oil
1/4 t salt
1/4 t pepper
1 t ground cinnamon
1/2 t cumin
1/2 t cayenne
1 can chicken broth
1 c golden raisins
1 pkg. couscous (any flavor will do)
Saute onions and carrots in olive oil until tender-crisp. Add salt and pepper, cinnamon, cumin and cayenne. Mix well. Add raisins.

Stir in chicken broth and water per couscous directions. When mixture has come to a boil, stir in couscous and finish according to directions on box.
