Chicken wraps
1 T sesame oil
1 lb. ground chicken (we used ground turkey)
3 green onions, sliced
2 cloves garlic, minced
1/2 red bell pepper, diced
1 T minced ginger
8 oz. firm tofu, diced
1/2 c. Asian beer (we just used beer that we had on hand)
1/3 c hoisin sauce
1 t hot chile paste
1/2 c chopped peanuts (optional)
2 heads lettuce, cored, washed and separated into large leaves
In large skillet, heat oil over medium heat until hot. Add chicken and cook until cooked through, breaking up any large pieces. Remove from heat and drain in colander to remove excess liquid. Return to pan. Add onions, garlic, pepper, ginger and tofu to pan. Cook until onions are softened. Pour in beer, hoisin sauce and chile paste. Cook until heated through. If desired, stir in peanuts.

Place a spoonful of meat mixture in center of lettuce leaf, edges curling upward. Fold burrito-styple.
