Salmon with Ginger & Green Onions

4 green onions

1 t Asian sesame oil

2 T soy sauce

2 T water

2 t grated, peeled fresh ginger

4 pieces salmon

rice or rice noodles (vermicelli) to serve

1.  Prepare rice or noodles as directed on package.

2.  Thinly slice dark green tops from green onions and reserve for garnish; cut remaining white and light green parts into 1/2 inch pieces.

3.  In skillet over medium heat, toss green onion pieces with sesame oil.  Cover and cook until green onions are tender.

4.  Stir in soy sauce, water and ginger.  Top with salmon.  Cook, covered until salmon turns opaque throughout. 

5.  Serve over rice or vermicelli, topping with liquid and green onion tops.
