2 eggs
1/2 c sugar
1/2 stick butter
2 c flour (1 c white & 1 c whole wheat works well)
3/4 c almonds
1/2 c candied ginger
1 t baking powder

 

Beat eggs with sugar.  Add butter, flour, baking powder, ginger and almonds.

Make 2 loafs.  Bake for 35 minutes at 350F.  Let it cool; cut into slices.  Arrange slices on baking sheet and bake additional 15 minutes.
