Spicy Chicken with Broccoli
2 chicken breasts
2 t cornstarch
1/2 t salt
1/4 t white pepper
1 lb broccoli
3 green onions
1 jalapeno
3 T vegetable oil
2 T brown bean sauce (can substitute 2 T soy sauce)
2 t finely chopped garlic
1 t sugar
1 t finely chopped gingerroot
Cut chicken breasts into 1/2 in. by 2 inch strips. Toss into cornstarch, salt, and white pepper. Refrigerate 20 minutes.

Cut broccoli into bite-sized pieces. Put in boiling water for 1 minute. Remove and rinse with cold water.

Meanwhile, cut onions into 1-inch pieces, including tops. Remove seeds and membrane from jalapeno, cut into thin slices.

Heat large skillet until very hot. Add oil, chile, bean sauce, garlic, sugar and gingerroot. Stir fry 1 minute. Add chicken, cook until thoroughly cooked (4-8 minutes). Add broccoli and onions, stirring until broccoli is hot. Serve over rice.
