Eggplant "Sandwich"
Appetizer

Eggplant
Olive oil
Salt & pepper
Goat cheese
Fresh basil, chopped
Mozzarella, thinly sliced

Marinara sauce

Heat marinara sauce and turn on broiler.  Cut eggplant into 1/4" thick slices.  Lay flat on baking sheet and brush lightly with olive oil.  Sprinkle with salt & pepper.  Broil until golden and turn.  Brush second side, same as first.  On half the slices, spread goat cheese, sprinkle basil, top with a bit of marinara sauce and a slice of mozzarella.  Place other half of broiled slices on top (like a sandwich) and heat until warmed through.
