Spicy Pork with Sweet Sauce
Entree

pork tenderloin, sliced 2-inch thick on the diagonal, pounded to 1/2-inch thickness

Rub:
1 T chili powder
2 t cumin
2 t brown sugar
2 t garlic powder
salt and pepper

Sauce:
1/2 c honey
1/4 c cider vinegar
3 T tomato paste
1 chipolte, minced (from a can of chipoltes in adobo sauce)
2 t adobo sauce (from can of chipolte)
1 t mustard

Rub pork tenderloin slices with rub.  Cook until cooked through, about 3 minutes per side.  (Internal temperature should reach 140F).

Serve with sauce.
