Beef Stroganoff

2-3 lb. chuck roast
1-2 c beef broth
1 onion, chopped
mushrooms (fresh or dried)
can of cream of mushroom soup
2 T dried parsley
2 T crushed garlic
pint of sour cream

Brown meat in a skillet.

In crockpot, add beef, onion, garlic, parsley, mushroom soup and mushrooms (if using dried).  Add 1-2 c beef broth so that the meat is completely covered.  Cover and cook 6-7 hours on low.  Add mushrooms (if using fresh), cook another 45 min-1 hour.  Add sour cream and heat thoroughly.  Serve over noodles.
