Ziti with portabello mushrooms
2 T butter
4 T olive oil
3 onions, chopped
1 t salt
1/2 t sugar
1/4 t pepper
1 lg. portabello mushroom, chopped
3 T parsley (optional)
3/4 lb ziti pasta (or penne)
3 oz. goat cheese, crumbled
3 T parmesan cheese

Melt 1 T butter and 2 T oil. Add onions, 1/2 t salt and sugar. Cook 20 minutes, until browned. Set aside.

In the same pan, melt 1 T butter and 1 T oil. Add mushrooms and 1/4 t salt. Cook 8 minutes until tender. Add onions, salt and pepper.

Meanwhile, cook ziti. Reserve 3/4 c. water from cooked pasta.

Toss ziti and 1/2 c pasta water with mushroom mixture, goat cheese and parmesan. Add more water if needed.
