Fruited Couscous Salad
Entree
1 1/c hot water
1/4 t salt
1 c uncooked couscous
1/2 c frozen oj concentrate, thawed
2 T white wine vinegar
1 T sugar
1 t grated orange peel
1 T oil
1 c blueberries
1 c raspberries
1 c strawberries
1 peach
1 plum
mint leaves
Cook couscous in salted water Boil water sturn in couscous, cover remove from heat

Combine oj concentrate, vinegar, sugar, oil and peel. Bend with whisk.

Add half miture to coucous. Mix and chill 1 hour

Add remaining ingredient to couscous. Toss gently
