Chicken Pomodoro
2 Chicken breasts
2 T. veg oil
1/4 cup vodka
1/2 cup chicken broth
2 T lemon juice
1/2 cup tomatoes chopped
2 T heavy cream
1/3 cup scallions minced
Cut chicken breasts in half and pound flat, about 1/4 inch thick.

Season cutlets with salt and pepper and flour.

Saute cutlest with oil Transfer to a platter.

Deglaze with vodka and cook until vodka is nearly gone.

Add broth and lemon juice. Return cutles to pan and cook each side 1 minute. Trnasfer cutles to a warm plate.

Finish the sauce with tomates and cream. heat through, then pour over the cutlets.

Garnish with the scallions.
