Maple-Mustard Pork on Mashed Sweets
Entree
Potatoes:
2 lb sweet potatoes
1/2 cup OJ (+1-2 T extra if necessary)
2 T sour cream
2 t brown sugar
1/4 t nutmeg or mace
salt & pepper

Meat:
1 lb pork tenderloin, cut into 3/4" slices
1/2 t salt
1/2 t pepper
2 t olive oil
1/4 cup chopped shallots
1.25 cups chicken broth
3 T maple syrun
2 T balsamic vinegar
1T Dijon

Potatoes: Peel potatoes & cut into chunks. Cover in lightly salted boiling water and cook until tender, about 20 minutes.

Drain potatoes and return them to saucepan. Add next 4 ingredients and mash with large fork, adding more juice if necessary. S & P to taste.

Meat: Sprinkle pork with salt and pepper. Heat oil in large skilet and cook over medium heat until browned, about 4 minutes each side. Remove to a platter.

Cook shallots for 1 minute, stirring. Add broth, bring to boil, and cook until somewht thickened and reduced, 3-4 minutes. Whisk in maple syrup, vinegar, and mustard. Return pork and any accumulated juices to pan and simmer until heated thru, about 1 minute..

THATs IT!!! You can do this ahead of time and then just keep it warm in the oven until youre ready
