Shrimp Gratin
Entree
1 c uncooked penne pasta

White sauce:
1 T butter
1/4 med. white onion, minced
2 T flour
1.5 c milk
1 t salt
1/2 t pepper

Shrimp:
1.5 t oil
1/4 med. white onion, diced
1/2 c small raw shrimp
1 T dry white wine

2 T butter, for greasing casserole
1/2 c shredded cheese (Mozz, Mont Jack, white cheddar)
2-3 T dry bread crumbs

Cook and drain pasta according to directions. Set aside.

White sauce: Melt 1 T butter in saucepan on low heat. Add minced onion and cook 2-3 minutes. Stir in flour, cook on low heat 2-3 minutes, stirring frequently. (Do not brown.) Remove saucepan from heat and whisk in milk. Return pan to stove on medium heat. Add salt and pepper, continue stirring until sauce begins to boil. Reduce heat to low, simmer 3-4 minutes, stirring frequently. Remove from heat and set aside.

Shirmp: In clean saucepan, add oil and onion. Cook on medium heat 2 minutes. Add shrimp and white wine. Cook shrimp on both sides, until light pink. Dont overcook shrimp. Remove from heat, stir in pasta and white sauce.

Grease inside of 1-quart casserole with butter. Add shrimp mixture. Top with shredded cheese and bread crumbs.

Bake in 450F oven for 8-10 minutes, or until bread crumbs are brown.
