Mango salsa
1 c diced fresh mango
1/3 c roasted red peppers, drained & diced
1/3 c diced red onion
1 jalapeno, seeded and minced
2 T fresh mint, chopped
1 T fresh lime juice
Combine all ingredients and chill. Serve with grilled fish or chicken. Makes about 1.5 cups.
