Fried Eggplant Fingers
Appetizer
1 Eggplant (cut in finger long strips)
2 Eggs
1/2 c milk
1/2 c flour
1/4 tsp black pepper
1/4 tsp white pepper
Italian Bread Crumbs
Oil (for frying)
Tabasco (to taste)
Salt eggplatn finger and let sit in colander 20 minutes. Rinse and dry well. Dip fingers into flour. Then dip into mixture of the eggs, milk and Tabasco. Dip into bread crumbs. Deep-fry slowly on both sides.
